Baked Fish with Zucchini Medley

Ingredients
- 2 - 6-8 oz fillets of sea bass or halibut
- 3 medium zucchini, diced
- 1 spring onions, diced
- 2 tbsp. Fresh parsley, chopped
- 2 lemons, one for the juice, one for slicing
- 3/4 cup olive oil
Directions

Preheat oven to 375 F.

Rinse the sh and pat dry with a paper towel.

Oil the underside of the sh so it doesn’t stick to the baking sheet, then season the sh and set on a baking sheet.

In a separate bowl, combine diced vegetables, lemon juice, seasonings, and olive oil.

Lay vegetable mixture alongside the sh.

Bake in the oven for 35-40 minutes, or until fish is flaky.

Serve immediately with lemon slices.
