Shrimp and Avocado Salad

Prep time: 10 Minutes


  • 12 cooked shrimp
  • 1 firm avocado, diced
  • 2 cups mixed greens
  • 2 lemons
  • 1 tsp. cayenne pepper
  • 1 tsp. sea salt and pepper to taste
  • 4 tbsp. olive oil
  • 1 tbsp. paleo mayo (or homemade)


  1. In a small bowl, blender or food processor, squeeze the juice from the lemons and add the cayenne pepper, salt, olive oil, and mayo. Blend on high speed for 15 seconds.

  2. In a large bowl, blend lightly the greens, shrimp, and avocado.

  3. Lightly toss the dressing into the salad and season to taste.
