Spring Salad with Avocado and Pumpkin Seeds

Ingredients
- 1 avocado, sliced
- 1 cup mixed greens
- 1 tsp. sesame seeds
- 2 tbsp. olive oil
- 1 tbsp. apple cider vinegar
- 2 slices red onion, sliced thin
- 1 cucumber sliced thin
- 1 cup broccoli (or any veggie raw you have on hand)
- 1/4 cup raw pumpkin seeds
- Juice of one lemon
- Juice of one lemon
- 1 pinch garlic powder
- salt and pepper to taste
Directions

In a small bowl, whisk lemon juice, olive oil, and apple cider vinegar (ACV) with seasonings. Set aside.

In a large bowl, blend all of the other ingredients and toss with dressing.

Separate into 2 bowls, season to taste and serve.
