Fluffy Acorn Squash Pancakes
Wake up to pancakes that keep you full and energized! These are lower carb than you are used to but not missing flavor. Top with chopped fruit and nuts for a delicious way to start your day!
Serves 2-4
Cook time: 20 minutes
Ingredients
- 3 large eggs
- 1/2 cup full fat coconut milk
- 1/2 tsp. vanilla
- 1/2 cup cooked acorn squash
- 1 cup almond flour
- 1/2 tsp. baking soda
- 1/2 tsp. baking powder
- pinch sea salt
- 20 drops liquid stevia
- 1-2 tbs. coconut oil or butter
Directions
1. Blend eggs, coconut milk, and vanilla in a high-powered blender until frothy. Add squash and dry ingredients, then blend again until smooth. Add stevia last to get desired sweetness.
2. Add coconut oil or butter to the skillet and cook pancakes on medium heat.
3. Top with berries, sunflower seed butter, and/or Chocolate Topping. Enjoy!

I’ve been using native path collagen,MCT oil,turmeric and krill oil for almost a year and it has helped me a lot with my back pain and other joints pains.I envy those peoples that are using flavored collagen creamer.They get MCT and collagen together.I am one f those that can not tolerate stevia.My request is can you make flavored collagen creamer without stevia.
