Ingredients
- 4 slices cubed bacon

3/4 lb Brussels sprouts,
- peeled and chopped
- 4 large eggs
- Salt and pepper to taste
- 2 tbsp. garlic infused olive oil
- 1 tbsp. apple cider vinegar
- 1/4 cup olive oil
Directions

Press SAUTÉ button on your Instant Pot and heat the oil.

Sauté bacon and Brussels sprout for 2 minutes.

Press the Stop button.

Whisk the eggs with a pinch of salt and pepper, and with apple cider vinegar.

Pour the egg mixture into your Instant Pot.

Lock lid into place and set on the MANUAL setting for 5 minutes.

Use Quick Release - turn the valve from sealing to venting to release the pressure.

Serve hot.
