Instant Brussels Sprouts and Bacon Omelette

Serves 2

Cook and Prep time: 10 minutes

Ingredients

  • 4 slices cubed bacon
  • 3/4 lb Brussels sprouts,

  • peeled and chopped
  • 4 large eggs
  • Salt and pepper to taste
  • 2 tbsp. garlic infused olive oil
  • 1 tbsp. apple cider vinegar
  • 1/4 cup olive oil

Directions

  1. Press SAUTÉ button on your Instant Pot and heat the oil.

  2. Sauté bacon and Brussels sprout for 2 minutes.

  3. Press the Stop button.

  4. Whisk the eggs with a pinch of salt and pepper, and with apple cider vinegar.

  5. Pour the egg mixture into your Instant Pot.

  6. Lock lid into place and set on the MANUAL setting for 5 minutes.

  7. Use Quick Release - turn the valve from sealing to venting to release the pressure.

  8. Serve hot.
