Eggs and Veggie Scramble

Ingredients

  • 4 Eggs
  • 1 Spring onion diced
  • 1/2 Red pepper diced
  • 1/2 Cup button mushrooms diced
  • 2 Tbsp. Ghee or Butter
  • 1 jalapeno (optional)
  • Salt and pepper to taste

Directions

  1. In a skillet, melt butter on medium-high heat.
  2. In mixing bowl, whisk eggs and salt and pepper.
  3. Add cut up vegetables to the skillet and cook until soft.
  4. Add eggs to skillet and keep flipping until cooked through.

Serves 2
