Ingredients
- 4 Eggs
- 1 Spring onion diced
- 1/2 Red pepper diced
- 1/2 Cup button mushrooms diced
- 2 Tbsp. Ghee or Butter
- 1 jalapeno (optional)
- Salt and pepper to taste
Directions
- In a skillet, melt butter on medium-high heat.
- In mixing bowl, whisk eggs and salt and pepper.
- Add cut up vegetables to the skillet and cook until soft.
- Add eggs to skillet and keep flipping until cooked through.
