Blueberry Coconut Keto Chia Pudding
Start your morning with flavor, fiber and healthy fats with staying power! This will tantalize your sweet tooth without the bad ingredients. Make this the night before and have a tasty dish ready to go when you are!
Prep time: 5 minutes + 2-hour minimum refrigeration time
- 6 Tbsp. Chia Seeds
- 1 1/2 Cups Coconut Milk
- 1/2 Cup Coconut Cream
- 1 tsp. vanilla extract
- 2 Tbsp. Granulated Stevia sweetener
- 1/4 Cup Blueberries
1. Blend all ingredients in a glass bowl and cover.
2. Refrigerate for 1 hour then stir. Put back in the refrigerator for 1-2 hours, or overnight.
3. Spoon into bowls, top with additional blueberries.
