Blueberry Coconut Keto Chia Pudding

Prep time: 5 minutes + 2-hour minimum refrigeration time

Ingredients

  • 6 Tbsp. Chia Seeds
  • 1 1/2 Cups Coconut Milk
  • 1/2 Cup Coconut Cream
  • 1 tsp. vanilla extract
  • 2 Tbsp. Granulated Stevia sweetener
  • 1/4 Cup Blueberries

Directions

1. Blend all ingredients in a glass bowl and cover.

2. Refrigerate for 1 hour then stir. Put back in the refrigerator for 1-2 hours, or overnight.

3. Spoon into bowls, top with additional blueberries.
