Cocoa Cinnamon Fat Bombs

Got a sweet tooth? This will satisfy you without the guilt! High in healthy fats, protein and fiber, this tasty treat has benefits from cinnamon that has been used for centuries to stabilize blood pressure and ward off inflammation.  

Makes 10

Cook and Prep time: 10 minutes

Ingredients

  • 1 cup coconut butter
  • 3 tbsp. coconut milk
  • 1 tbsp. vanilla extract
  • 1 tbsp. liquid stevia
  • 1 cup unsweetened, shredded coconut
  • 2 oz. dark organic chocolate, cut into chunks (70% or darker, or can substitute keto-friendly chocolate chips if available)
  • 1/2 tsp. of cinnamon powder 

Directions

  1. Place all ingredients except for shredded coconut, into a double boiler over medium heat.

  2. Stir constantly until melted.

  3. Fill parchment cups 1/4 full with shredded coconut.

  4. Pour melted cocoa mixture over coconut.

  5. Refrigerate for 45 minutes.

  6. Remove when serving, but keep refrigerated.
