Decadent Keto Chocolate Chip Cookies

You'll never know these are healthy and fit into your Keto plan until you taste the flavor in these all-time favorites. Loaded with healthy fats from almond flour, and free from the usual sugary carbs, you'll come back to these for your sweet tooth often!

Makes 16 (or you can make them smaller!)

One serving is 2 cookies

Prep and Cook time 

Ingredients

    • 3/4 cup coconut oil
    • 1/2 cup granulated stevia
    • 2 eggs
    • 2 3/4 cups almond flour
    • 1 tsp. Vanilla extract (can use almond extract)
    • 1/2 tsp. Baking soda
    • 1/2 cup Dark Chocolate Chips (keto friendly!)

Directions

  1. Preheat oven to 350 F.

  2. In a large bowl, blend with an electric mixer (or use a food processor), coconut oil and sweetener.

  3. Gently blend in eggs and vanilla.

  4. Blend dry ingredients by hand in a separate bowl.

  5. Slowly add dry ingredients to the egg and oil mixture, a little at a time and blend.

  6. Gently add chocolate chips and stir by hand.

  7. Drop large tablespoons of the mixture onto a lined baking sheet (or can lightly grease with coconut oil to prevent sticking) and bake for 12 minutes or until edges are browned.

  8. Remove from oven and let cool for approximately 20 minutes before trying to remove with a spatula from baking sheet.

  9. Keep in a sealed container, refrigerated, separated by waxed paper.
