Chicken with Squash "Spaghetti"

Serves 4

Cook and prep time: 1 hour

Ingredients 

  • 1 lb spaghetti squash
  • 1 Tbsp avocado oil
  • Salt & ground pepper to taste
  • 1 lb chicken breasts, boneless, skinless, cubed i
  • 2 Tbsp garlic-infused olive oil
  • 1- 8 oz. can diced organic tomatoes, drain juice

Directions

  1. Preheat oven to 400 F/200 C degrees.

  2. Cut the spaghetti squash in half and remove the seeds with a spoon.

  3. Season it with avocado oil, salt, and pepper.

  4. Place the squash cut side down on a baking sheet and bake until golden, 30-40 minutes.

  5. Remove from oven and let cool for 10 minutes.

  6. Use a fork and scrape out “spaghetti.”

  7. Heat the oil in a frying skillet over medium-high heat.

  8. Add the chicken cubes, and tomatoes, and season with salt and pepper. Cook while stirring for approximately 5 minutes, or until the chicken is done.

  9. Add your chicken and “spaghetti” to a large bowl and stir.

  10. Taste and adjust salt and pepper. Serve.
