Ingredients
- 1 1⁄2–2 lbs. flank steak
- 1 cup chimichurri sauce (P. 177)
- salt and pepper to taste
- 1 tbs coconut oil
Directions
- Remove steak from fridge and pat dry to remove excess moisture.
- If you haven’t already, prepare your Chimichurri Sauce.
- Season steak with salt and pepper.
- Add tablespoon of coconut oil to hot skillet. Gently set flank steak in the pan. Sear on each side 5 minutes.
- Rest meat for 3 minutes, then slice against the grain.
- Finish by drizzling flank steak with Chimichurri Sauce.
