Bison Meatloaf with Tri-Colored Peppers

Ingredients

  • 1 1/2 pounds ground bison
  • 1 egg
  • 1/4 Cup diced tomatoes
  • 1 Cup finely chopped spinach
  • 2 Tbsp. flax seeds
  • 1 red pepper diced
  • 1/2 green pepper diced
  • 1/2 yellow pepper diced
  • 2 cloves garlic diced
  • 1 Tbsp. sea salt
  • 1 tsp black pepper
  • 2 Tbsp. fresh parsley

Directions


  1. Preheat oven to 375 degrees.
  2. Blend all ingredients into large bowl with hands.
  3. Put meat into a glass or metal 9x5 bread pan.
  4. Bake in the oven for 1 hour, or until edges are browned.
  5. To test for doneness, stick a toothpick into the center, it should come out clean.
