Roasted Salmon in Ginger Lemon Marinade

Serves 4

Cook and prep time : Marinade 3 hours. Bake 1 hours.

Ingredients

  • 2 lbs salmon fillet
  • 3/4 cup lemon juice (freshly squeezed)
  • 1 medium piece of ginger
  • Salt to taste
  • 1 tsp fresh parsley, finely chopped
  • 1 tsp fresh chives, chopped
  • 1/4 cup Garlic infused olive oil

Directions

  1. Cut the salmon into slices and place on a large plate. Season with the salt and pour the lemon juice over the salmon fillets.

  2. Chop ginger into strips and place on the top of the sh. Cover and marinate in the fridge for 3 hours.

  3. Preheat oven to 360 degrees F/180C.

  4. Line deep baking dish with parchment paper.

  5. Remove the salmon from marinade and arrange in baking dish. Discard lemon juice and ginger. Season with the salt, and sprinkle with parsley and the chives; drizzle with the olive oil.

  6. Cover with foil and place in the oven. Bake for 30 - 40 minutes, then open the foil and bake for another 5-10 minutes.
