Caveman Balsamic Vinaigrette

This tasty dressing can be used for salads and as a marinade. Rich in heart-healthy, anti-inflammatory fats and acetic acid that is great for the formation of blood clotting...this will be a staple in your fridge!

Serves: Makes 16 - 2 oz. servings

Prep time: 10 minutes

Ingredients

  • 1 medium shallot
  • 1 cup balsamic vinegar
  • 1 tbs. fresh basil, chopped
  • salt and pepper to taste
  • 10-15 drops liquid stevia
  • 1 tsp. Dijon mustard
  • 2 cups pure olive oil
  • 1/4 cup water

Directions

1. Blend all ingredients except olive oil and water in blender until smooth.

2. Slowly add olive oil to blender and continue to blend. Loosen with water to achieve desired consistency
