Dried Beetroot Snack (Instant Pot)

Serves 4

Cook and Prep time: 50 Minutes

Ingredients

  • 5 medium beets

  • Salt and black pepper (to taste)

  • 1/4 cup garlic-infused olive oil

  • 2 cups of water

Directions

  1. Wash and peel beets; thinly slice a beet with a mandolin.

  2. Sprinkle beetroot slices with olive oil, and salt and pepper to taste. Spray a baking dish with a cooking spray.

  3. Layer beets on a baking dish.

  4. Add water to the inner stainless steel pot in the Instant Pot, and place the trivet inside.

  5. Place the baking dish on a trivet.

  6. Lock lid into place and set on the MANUAL setting for 15 minutes.

  7. Press Natural Release.

  8. Serve on room temperature.
