Ingredients

5 medium beets

Salt and black pepper (to taste)

1/4 cup garlic-infused olive oil

2 cups of water
Directions

Wash and peel beets; thinly slice a beet with a mandolin.

Sprinkle beetroot slices with olive oil, and salt and pepper to taste. Spray a baking dish with a cooking spray.

Layer beets on a baking dish.

Add water to the inner stainless steel pot in the Instant Pot, and place the trivet inside.

Place the baking dish on a trivet.

Lock lid into place and set on the MANUAL setting for 15 minutes.

Press Natural Release.

Serve on room temperature.
