Spinach Puree

Spinach has a multitude of benefits including high in vitamins A and C. It is also known for helping the body with bone loss, contains fiber, and protects against heart disease, breast and other cancers.

Serves 4

Cook time: 30 minutes

Ingredients

  • 1 tbsp. ghee
  • 1 lb frozen spinach- drained
  • 1 clove garlic, minced
  • add salt and pepper to taste
  • 1/2 cup unsweetened almond milk

Directions

  1. Remove the frozen spinach from the box and place it in a microwave-safe bowl for 1- 2 minutes.

  2. Microwave the spinach for 1-2 minutes or until the spinach becomes soft.

  3. Drain the spinach in a colander.

  4. Grease a large stock pot with ghee.

  5. Add the spinach, garlic, salt, and pepper into the pot and stir. Cover and cook on low for 30 minutes.

  6. Stir in almond milk

  7. Stir and serve.
