Paleo Stuffing

You'll never miss the bread in this tasty nutrient dense side dish. With healthy carbs and flavor-rich seasonings and ingredients, you'll never miss the old style of stuffing that sabotaged your diet!

Serves 8-10

Cook time: 60 minutes

Ingredients

  • 1 sweet potato, cubed
  • 1 lb. ground pork
  • 1 tsp. fresh sage
  • 2 tbs. fresh rosemary
  • 1 tsp. salt
  • 3/4 cup butter
  • 1 onion, chopped
  • 5 ribs celery, chopped
  • 3 cloves garlic
  • 1/4 turkey drippings or bone broth (P. 110)
  • 2 eggs, beaten

Note: You can substitute Granny Smith apples for sweet potatoes and add them to your onion and celery mixture.

Directions

1. Preheat oven to 400° F. Bake sweet potato 20–30 minutes. Remove from oven and let cool. Set aside.

2. Brown ground pork in skillet. Add herbs and salt.

3. While pork is browning, sauté onions, celery, and garlic in butter until soft.

4. Heat oven to 350° F.

5. Using slotted spoon, remove pork. Combine with veggie mixture and sweet potatoes in 8x8" baking dish.

6. Whisk drippings or broth into eggs. Pour over pork mixture and stir.

7. Bake 30 minutes or until top starts to brown.
