French Vanilla Collagen Waffles

These waffles are crispy on the outside and fluffy on the inside—all while being gluten-free, dairy-free, and sugar free (with the exception of the maple syrup).

Ingredients

  • 1 cup cassava flour 
  • 1 scoop French Vanilla Collagen Creamer 
  • ½ cup arrowroot powder
  • 2 eggs
  • ¾ cup coconut milk
  • ½ cup grass-fed butter or ghee, melted
  • Optional: 1 tablespoon maple syrup

    Instructions

    1. Preheat the waffle iron to high heat. Grease lightly with butter or ghee.
    2. Meanwhile, in a medium bowl mix, whisk together the egg, grass-fed butter, and coconut milk. Set aside.
    3. In a large bowl, mix together the cassava flour, Vanilla Caramel Collagen Creamer, and arrowroot powder. Set aside.
    4. Mix the dry ingredients into the wet ingredients.
    5. Transfer the desired batter amount into the lightly greased waffle iron. Close and cook until steam stops coming out, about 3-5 minutes. Repeat with the remaining batter.
    6. Top with grass-fed butter and or maple syrup and enjoy!
