Caveman Succotash

This hearty nutrient-rich meal will keep you full while adding in necessary nutrients that taste great and keep you full. Loaded with healthy carbs, this is a great post workout food to replenish energy levels and keep you going all day long!

Serves 2-4

Cook time: 20 minutes

Ingredients:

  • 1 Tbs. coconut oil
  • 1 small onion, diced
  • 1 sweet potato, medium, diced and roasted
  • 1 scallion, thinly sliced
  • 2 cloves garlic, crushed
  • 1 link andouille sausage, medium diced
  • 1 cup chicken stock
  • 1/2 tsp. fresh thyme
  • salt and pepper to taste
  • 3 tbs. butter

Directions

1. Melt coconut oil in skillet over medium heat.

2. Add veggies, garlic, and sausage and lightly sauté 3–5 minutes.

3. Add chicken stock and thyme. Simmer 3–5 more minutes.

4. Add salt and pepper, whisk in butter, and serve.
