Instant Cauliflower "Rice" with Herbs

Serves 4
Cook time: 20 Minutes 
  • 1 head of cauliflower
  • 1 cup water (for Instant Pot)
  • 2 Tbsp butter, grass-fed
  • 1 tsp Sea salt
  • 1 tsp dried parsley
  • 1 tsp fresh tarragon, finely chopped
  • 1 tsp fresh cilantro, finely chopped
  • 1 tsp cumin

 Directions

  1. Wash the cauliflower and trim off the leaves.

  2. Pour one cup water into your Instant Pot.

  3. Insert the steamer and place the cauliflower.

  4. Lock lid into place and set on the MANUAL setting for 10 minutes.

  5. Use Quick Release - turn the valve from sealing to venting to release the pressure.

  6. Remove the cauliflower to a plate, and break up with a potato masher. Stir the butter, and add all seasonings to taste; stir.

  7. Serve.
